Vegetables crops may be produced by the organization that will eventually handle and process them, or often the processor will contract farmers to grow the crops. Large processors have a fields department that employs a number of horticulturists. The field department supplies the seed, specifies the kind and extends of fertilization and soil treatment required, and supplies the ingredients. Soil fertilization and treatment, and planting are done by the farmer. Weeding may be done by actual removal of weeds or by chemical treatment, and the latter may be done the farmer or the processor. Spraying or dusting with insecticides or fungicides may be done by the framer or the processor. Personnel from the processor’s foiled department decided when the crop is at the right maturity for harvesting and arrange for harvesting of the crop. If the crop cannot be handled quickly enough, the vegetables may be passed their optimum maturity, resulting in a loss of product quality.
