Nutrients in cucumber

All cucumbers (Cucumis sativus) belong to the Cucurbitaceae or gourd family. This family contains some 90 genera and 750 species.

Fresh cucumbers have very high water content (95%), and they are low in calories (15 kcal per 100 g) and most other nutrients.

However, they are a fair source of vitamin including vitamin A, B6, K, E, B1, B2, B3 and vitamin C. Most of the vitamin A is in the rind. Key minerals include calcium, iron, magnesium, phosphorus, potassium, sodium, zinc copper and manganese.
Cucumber help to normalize heart rhythm, relegate blood pressure ensure proper function of nerves and muscles and maintain the body fluid balance.

They a good source of fiber and lend a lot of flavor and crunchy texture to recipes. Their sterol content may help prevent heart disease by lowering cholesterol.
