There are more than a dozen major vitamins – vitamins , C, D, E, and K, along with the B complex – and they are all essential to your good health.
Vitamins take part, along with minerals and enzymes, in chemical reactions. For example, vitamin C participate in the production of collagen, one of the main types of protein found in the body.
Fresh vegetable juices are excellent sources of water soluble vitamins (the B complex and vitamin C) and some fat-soluble vitamins (the carotenes, known as provitamin A and vitamin K).
Minerals
There are about two dozens minerals that your body needs to function normally.
Minerals- along with vitamins – are components of enzymes. Minerals also makes up of bone and blood tissue and help maintain normal cell function.
The major minerals include calcium, chloride, magnesium, phosphorus, potassium, sodium and sulfur.
Trace minerals - those needed in very small amounts – include boron, chromium, cobalt, copper, fluoride, manganese, nickel, selenium, vanadium and zinc.
Plants incorporate mineral, which occur in inorganic forms in the soil into their tissues.
As a part of this process, the minerals are combine with organic molecules into easily absorbable forms, which makes plant food an excellent dietary source of minerals.
Juicing is believed to provide even better mineral absorption than whole vegetables because the process of juicing liberates into a highly absorbable form.
